Recipe | Raw Coconut Brownies

This is my recipe for a batch of chocolatey heaven, raw coconut and chocolate brownies. The recipe is very similar to my ‘energy balls’ recipe, inspired by the beautiful Deliciously Ella. Ingredients: 

  • 2 cups chopped pitted dates
  • 1 1/2 cups almonds & pecans
  • 3 tbsp cacao powder
  • 1  tsp vanilla extract
  • 2 tsp coconut sugar
  • 2 tsp chia seeds
  • 1/4 cup desiccated coconut plus extra to garnish
  • 2 tbsp coconut oil
  • ¼ cup maple syrup

Equipment: 

  • Nutri-Bullet or food processor
  • Baking parchment

Method:

  • Blend the nuts to form a light flour before adding the cacao powder, chia seeds, coconut sugar and desiccated coconut, blend again
  • Add vanilla extract, coconut oil, dates and maple syrup and blend again. If the mixture is too thick, add a little water
  • Spread the mixture evenly into a shallow, lined baking tray before sprinkling extra desiccated coconut on
  • Placing in the freezer to set for an hour
  • Lift the brownie and parchment out of the tray and cut into portions
  • Box it up and store in the fridge and you’re good to go!
